Microgreen Sugar Pea Smoked Salmon Pancakes Recipe

Ok, you NEED to try this recipe ASAP! These savoury smoked salmon pancakes are to die for. Imagine fresh hummus, a touch of zesty lemon, and those delicious little capers all blended together in a mouth-watering pancake shell topped with fresh, organic and home-grown pea shoot microgreens from Gift-a-Green. This delicious little dish can’t be made anywhere but home.
Ingredients
3 large eggs (organic)
3 Tbsp chopped chives
2 tsp lemon zest
2 Tbsp extra-virgin olive oil
1 cup cottage cheese
1 minced garlic clove
1 cup Gift-a-Green chopped pea shoots (microgreens)
1/2 cup chickpea flour
1/2 tsp Himalayan rock salt
Fresh Smoked Salmon – as much as you prefer : )
Directions:
In a medium-size bowl, mix together the eggs, cottage cheese, oil, flour, garlic, lemon zest, and salt. You can also mince up a small bundle of the pea shoots for extra flavour.
Using medium heat, lightly grease up your pan or skillet. Once your pan is ready to go, add batter (1/4 cup at a time) to pan and fry the pancakes until bubbles form on top, usually about 2 to 3 minutes (watch closely so they don’t burn).
Flip and fry the other side until the pancakes are a light to medium brown on the bottom (make sure the center is cooked thru).
After they are all prepared serve with fresh smoked salmon, a dollop of cream cheese your favourite wine and don’t forget to call up your bestie.
